Healthy Sheet-Pan Salmon and Veggies

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 3 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Toss potatoes with 1 tablespoon olive oil, salt, and pepper. Spread on the pan and roast for 10 minutes.
  3. Add broccoli and bell pepper to the pan, tossed with 1 tablespoon olive oil.
  4. Push vegetables to the sides and place salmon fillets in the center.
  5. Brush salmon with remaining olive oil and sprinkle with garlic, paprika, salt, and pepper. Top with lemon slices.
  6. Roast for 12-15 minutes, until salmon flakes easily and vegetables are tender.
